Ingredients

  • 6 oz turkey kielbasa, sliced
  • 1/2 cup chopped yellow onion
  • 1 clove garlic, minced
  • 1 cup whole wheat penne pasta
  • 1 1/2 cups low-sodium chicken broth
  • 1 cup chopped cherry tomatoes
  • 1 cup baby spinach, packed
  • 1/2 tsp dried basil

Instructions

  1. Place a medium-sized pot or deep skillet over medium heat. Add the sliced turkey kielbasa and cook for 3–4 minutes, stirring occasionally, until lightly browned on both sides.
  2. Add the chopped yellow onion to the pot and sauté for 2–3 minutes, until the onion becomes soft and translucent.

  4. Add the whole wheat penne pasta, low-sodium chicken broth, chopped cherry tomatoes, and dried basil to the pot. Stir everything together to combine.
